Lentil & Corn Curry Salad

This recipe is a delicious and healthy way to enjoy sprouted lentils! The combination of raw sprouted lentils, cooked corn, and spices creates a perfect balance of flavors and textures. It's easy to make and packed with nutrients.

Ingredients:

  • 2 cup sprouted lentils
  • 2 cup corn (fresh or frozen)
  • Olive oil for cooking
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp curry powder
  • 1 tsp finely chopped thyme
  • 3 tbsp lemon juice
  • Salt and pepper, to taste

Instructions:

  1. Cook the corn in a skillet with a drizzle of olive oil over medium heat for 2-3 minutes, until it starts to lightly brown.

  2. Add chili powder, cumin, curry powder, and thyme, and cook for 2-3 more minutes. Remove from heat and set aside.

  3. In a large mixing bowl, combine the sprouted lentils, lemon juice, salt, and pepper.

  4. Toss everything together until the lentils and corn are evenly coated.

  5. Serve as a side dish or over a bed of rice, quinoa, or greens. Enjoy!
