Mung Bean & Chickpea Salad

This raw salad is a perfect lunch option. The combination of sprouted mung beans and chickpeas provide a good source of protein and the red pepper and red onion provide a nice crunch. The dressing of lemon juice and olive oil makes the salad zesty and refreshing. Perfect for a healthy lunch that is packed with flavor.


  • 1 cup of sprouted mung beans
  • 1 cup of sprouted chickpeas
  • 1 red pepper, diced
  • 1/2 red onion, diced
  • 2 tbsp of lemon juice
  • 2 tbsp of olive oil
  • Salt and pepper to taste


  1. In a large mixing bowl, combine the sprouted mung beans, sprouted chickpeas, red pepper, and red onion.

  2. In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Serve and enjoy!
