Sprouted Chickpea Sandwich

This sandwich is a great option for a healthy and satisfying lunch. The sprouted chickpeas provide a good source of protein and chickpeas are known for their high fiber content. The sandwich can be easily customizable to your taste.


  • ½ cup sprouted chickpeas
  • 1 stalk celery
  • ¼ small red onion
  • 1 tbsp mayonnaise
  • Fresh lemon juice, to taste
  • Salt and pepper
  • 2 slices of bread
  • Lettuce, sliced
  • A handful of broccoli sprouts (or any other sprouts)


  1. Finely chop the red onion and celery.

  2. In a bowl, combine with chickpeas, mayonnaise, lemon juice, salt, and pepper.

  3. Spread out two slices of bread to assemble the sandwich.

  4. Place the lettuce slice on top, followed by a good quantity of broccoli sprouts.

  5. Spoon the chickpea mixture on top, and cut it in half.

  6. Serve and enjoy!
