The final verdict on whether broccoli sprouts are “100x more healthy” than mature broccoli
Many of the claims about the benefits of broccoli sprouts are big. Whether they say that they contain 50x more antioxidants, or 100x more sulforaphane than mature broccoli. Most of these claims aren't accurate, but not for the reason you’d guess. It just doesn’t measure what people think it measures.
Both versions of the vegetable carry glucoraphanin — a stored version of the good stuff. It is the compound your body can turn into sulforaphane, and sulforaphane is what actually delivers the antioxidant and anti-inflammatory effects.

What is actually inside a broccoli sprout?
Two things matter, and the plant deliberately keeps them apart.

Glucoraphanin
The stored version of the good stuff. On its own it does nothing for you. It has to be processed first.

Myrosinase — we’ll call it Myro
The plant enzyme that activates the glucoraphanin. It sits in a separate compartment until the cells rupture.

The moment you chew
The compartments break, the Myro finally meets the glucoraphanin, and the reaction produces sulforaphane — the actual good stuff.
Sprouts vs the broccoli on your plate
Mature broccoli is a genuinely great vegetable, so this is not a knock on it. Sprouts are just built differently. Gram for gram, young broccoli sprouts are often cited as holding 10 to 100 times more glucoraphanin than the grown-up version.
That number is roughly real. The problem is what people do with it.
It is not 100x more healthy. It is up to 100x more stored potential.
How a sprout becomes sulforaphane — in your body
A sprout does not hand you ready-to-use sulforaphane. It hands you the raw material and the tool to make it. When you chew, chop, or blend, the plant cells break and the Myro finally meets the glucoraphanin. That contact is what creates sulforaphane.
Your role has only just begun at that point. Your gut bacteria may pitch in and convert a little more further down the line. Once sulforaphane is absorbed, your body processes what is left and clears it out, mostly through urine.
Which is why nobody can tell you how much of the good stuff you personally took in from a given bowl, sprouts or broccoli. So much of it depends on the body doing the eating.
Why your results will not match your friend’s
Two people can eat the exact same bowl of sprouts and end up with different amounts of sulforaphane. That is normal. How much you actually make depends on your gut bacteria, how thoroughly you chew or blend, whether the sprouts got cooked into oblivion, how old they were, and your own biology.
The sprouts bring the ingredients. You are part of the final recipe — which means the handling is worth getting right.
- Chew them well, or chop and blend them before they go in.
- Eat them fresh, while the enzyme is still lively.
- Go easy on high heat if you are after that enzyme activity.
- Keep it regular. Consistency matters more than any single big serving.

Broccoli sprouts have been studied for decades. So no, sprouts do not contain 100x more antioxidants or “healthy stuff.” The accurate version is that sprouts can hold, depending on the seed and how they were grown, up to 100x more stored potential — and how much you actually produce comes down to your body.

Do sprouts already contain sulforaphane?
Mostly no. They carry glucoraphanin, and the sulforaphane forms when you break the cells.
Does cooking ruin it?
High heat can knock out the enzyme, so raw or lightly handled sprouts tend to keep more of it.

Grow them fresh at home

A quick safety note
Because sprouts grow in warm, damp conditions, treat them like the fresh food they are. Use seeds meant for sprouting, start with clean equipment, rinse and drain well, do not let them sit in standing water, and refrigerate after harvest. If you are pregnant, older, immunocompromised, or feeding young kids, you may want to cook them first.
